The worst that isn't around anymore was Rattler. Wilde Beast, Boardwalk Bullet, and Hurler @ Carowinds are all bad. They just hurt. Good woodens like Mystic Timbers, GhostRider, or American Thunder are really good. Bad ones are really bad.

Here in Texas The Rattler was gosh awful from day 1.
Sadly, the Texas Giant got really bad, too, as do all Summer/Dinn creations. Re-working both coasters with the Rocky Mountain treatment was the best decision.
Before The Texas Giant got bad, it was such an amazing coaster. I cried the last few years I rode it, because it had fallen into such good condition. As a kid is struck terror in us!

Hi! Though I have a short credits list, I have some input.
The shakiest, roughest and most painful wooden coaster that I have ridden is Hades 360 at Wisconsin dell's Mt. Olympus theme and water park. This coaster was the first coaster that was created by the manufacturer "The Gravity Group." and it really shows it's age, especially in the underground segments (The worst part of the ride, in my opinion). You get an insane amount of headbanging on those bulky over-the-shoulder restraints, and the inversion is just painful. (This ride has a wooden track and steel supports, so technically a hybrid- But I'm deciding to count it in anyways.)
