just can't get it when it comes to building rides

Cant offer you the name of a website. There are a couple of good ones out there run by individuals that are full of online
hints, info, etc on how to do almost anything but Im afraid I cant think of what they are now. But to answer your two specific items above the top spinning part shows up automatically once you have finished the building of the tower and put in the entrance and exit. For roofs ,select your roof piece, raise your mouse to the level you want the roof at, and left click. Once you have the first roof piece in you can also point to the spot where you want another piece with the cursor, then press ctrl key and other pieces will be put in at the same height as the first piece.

Check out the coaster simulation forum on http://www.coaster-net.com A lot of the people on there use RCT2, and are extremely good at it.
